Vegan Coconut Cream Pie Smoothies

it’s summer. I feel like you should consume as much coconut you can. Also creamy cold beverages.

I happen to love coconut cream pie and wanted to recreate it without turning on my oven. Baking pie crusts and pies and messing with custards is something I don’t feel like deal with right now.

With this smoothie I focused on the natural wonderfulness of coconut and coconut milk and the smoothie turned out so creamy and rich and it’s vegan.

There’s a time and place for creamy cookie butter white chocolate banana smoothies and chocolate cake batter, but feeling like you just drank your dessert and 789 calories in 3.7 seconds is fun of course, but not something you’d probably want to make a habit of for breakfast or for an afternoon pick-me-up.

coconut cream pie smoothie 001So after taking that picture I realized what that looked like and well sorry… Mind out of gutter now.

This smoothie hits the spot after a day at the beach. There was a bit of texture retained from the graham crackers and coconut flakes blended in and the bananas added perfect creaminess, and I loved every coconutty second while I was guzzling.

And convinced myself, without much effort, that I was indeed drinking a coconut cream pie.

Coconut Cream Pie Smoothie (vegan and gluten-free, as indicated below*)

Makes about 12 ounces

2 ripe small/medium bananas (previously frozen in chunks is preferred)

1 standard full-size graham cracker

1/2 to 2/3 cup coconut milk (or cream or milk)

1/2 cup sweetened shredded coconut flakes

2 tablespoons granulated sugar, optional and to taste

1/2 teaspoon coconut or vanilla extract

Combine all ingredients in a blender and blend until smooth and creamy. Garnish with a sprinkle of coconut or graham cracker crumbs. Serve immediately.

Optional add-ins: 1/4 cup white chocolate or chocolate chips, 1 to 2 ounces rum or Malibu, replace the coconut milk with coffee for a coffee-coconut cream pie smoothie, 1 scoop protein powder, dollop of nut butter, add 1 scoop of ice cream for a milkshake, garnish with whipped topping or whipped cream

*To keep vegan, use vegan graham crackers (Nabisco Orignal Honey Graham Crackers are ‘accidenttly vegan’) and vegan milk (coconut, cashew, almond, soy, rice). To keep gluten-free, use gluten-free graham crackers. Skinny Crisps Apple Crisps are vegan, gluten-free, high fiber, low carb, and amazing.
