Spirit Animals…. Can we talk about this?

What is your spirit animal? Llama? Cat? Rabbit?…. A Moose?

I think my spirit animal is a Moose. Okay well I really would say Reindeer, you know, the kind that flies.

Except I would wear plaid and most likely have roller skates and not a red nose and GLITTER tons of glitter. but reindeer aren’t real. So would that be a caribou. Do you know what would be cooler then that? A Unicorn. I mean can a Unicorn even be a spirit animal?

Wow… I have problems.

Am I seriously talking about having a spirit animal?

Am I seriously talking about having a unicorn be mine? You know I’m having a rough week if my pulling out the unicorn talk. It’s only Monday. It’s totally going to be a long week. No bigs.

This is kinda like glitter… Right?

it’s kinda like the end of a good movie or book… Okay I’m really not making any sense here.

I think I established I have problems today, right now in this blog.

Case and point! umm The point. Try this Coconut Shrimp it’s bonkers good.

Coconut Baked Shrimp

serves 2-4

1 pound tail-on, peeled and deveined shrimp (I used 31-40 count)

2/3 cup lite coconut milk

2 tablespoons olive oil

2 cloves garlic, minced

1/4 teaspoon salt

1/4 teaspoon pepper

1/4 cup panko bread crumbs

3 tablespoons shredded coconut (I used sweetened)

3 tablespoons chopped fresh parsley

Preheat oven to 425 degrees F. Spray an 8×8 baking dish with non-stick spray. If desired, slice shrimp down the middle to butterfly.

Toss shrimp with salt and pepper, then lay in the baking dish. In a bowl, combine coconut milk, olive oil, garlic and parsley. Pour over shrimp in the baking dish. In another bowl, mix bread crumbs and coconut. Sprinkle over shrimp. Bake for 20 minutes, or until bread crumbs are golden brown. Serve shrimp and spoon a bit of the coconut milk mixture over top. Top with salsa/ sauce.

Note: if you are not a fan of coconut (especially the texture), you can leave it out and up the quantity of the panko bread crumbs. The coconut milk itself does not have a strong coconut flavor.

Pineapple Peach Salsa

1/4 cup chopped pineapple (about 4 large chunks)

1/3 cup chopped peaches (I used 2 doughnut peaches)

1/4 cup chopped tomatoes (about one medium size tomato

2 tablespoons chopped cilantro

1/4 teaspoon salt

1/4 teaspoon pepper

juice of half a lemon

Combine all ingredients in a bowl, spritz with lemon and toss to mix. Will stay fresh for 2-3 days in the fridge!

I had the intentions to make a chunky salsa but I wanted to use my new food processor so I kinda over did it and made it a sauce you can freeze the sauce though. you can use a blander if you do nut have a food processor.

This is my Dance Like Nobody Is Watching Snack.

I’ve been pretty humble on my blog up until this point, but it’s time I tell you something: I’m an uh-mazing dancer. (This is a LIE!)

In my dreams, I’m an amazing dancer. In reality I’m a whole lotta elbows on the dance floor. Things get real arm-y. I also have this butt move that I’m pretty sure is flawless… but I refuse to bust that move in any sort of close proximity to a mirror. I fear I may be sadly mistaken.

I dance like nobody is watching because on a dance floor, no one is watching! Everyone is too consumed with their own possibly embarrassing butt move to be concerned with me, their elbow-y neighbor.

I’d like to take this moment to kindly suggest that we also eat like nobody is watching

Maybe that means putting cheese crackers and pretzels in the same bowl as your caramel popcorn. Go on… I dare ya

I am not pregnant. You can put that out of your mind here and now.

I am a little crazy. You can keep that in your mind here and now.

How can this possibly be edible?

Oooh goodness… it’s like the taste bud fairies did an ugly backflip and blessed this combination.

The cheese cracker is our earthy base flavor. The pretzels are salty so they know how to play nice with base flavors. The caramel compliments the saltiness of the popcorn, pretzels, and crackers and…. you’re still looking at me like I’m crazy.

I get it. I’m weird. You’re either on the awkward-elbow-dance-train, or you’re not

I can feel you trying to brain-taste this combination. I can feel your curiosity. Give this snack a try!

Kitchen Sink Caramel Popcorn

makes 12 cups

for the popcorn mixture

2 tablespoons vegetable oil
1/3 cup yellow popcorn kernels
1/2 teaspoon salt
1 1/2 cups cheese crackers
1 1/2 cups pretzels

for the caramel:

1 cup (2 sticks) salted butter
2 cups packed brown sugar
1/2 cup light corn syrup
1 teaspoon salt
1 teaspoon baking soda

To make the popcorn mixture:

In a large pan over medium-high heat, warm oil. Add the corn kernels and place a lid, slightly ajar, over the pot. Pop the popcorn until the popping sound subsides. Turn off the heat, carefully pour the hot popcorn into a large bowl and sprinkle with the salt.

In a 9×13 pan, measure 7 heaping cups of popcorn, being sure to avoid any unpopped kernels. Top popcorn with crackers and pretzels. Set aside.

Place a rack in the center of the oven and preheat to 200F.

To make the caramel:

Combine butter, brown sugar, corn syrup and salt in a medium, heavy-bottomed saucepan. Carefully whisk the mixture as it heats and the sugar melts. Boil the sugar and butter mixture for 5 minutes. Remove from heat and add baking soda. Whisk well. Carefully pour the sugar mixture into the 9 x 13 inch pan over the popcorn mixture. Use a large wooden spoon to toss the two together making sure that every bit of the popcorn mixture is coated with caramel. Be careful not to touch mixture with your hands, as it could burn you.

Place pan in the oven and bake for 30 minutes, removing the pan to toss every 10 minutes. Once baked, remove from oven. Carefully spoon onto sheets of waxed paper to dry. Once dry, store in an airtight container. Popcorn will last for up to one week.

Peanut Butter Banana Spinach Smoothie

Peanut Butter and spinach…. Say whaaaaaaaaaat??!!

yeah I’m going bonkers here people BONKERS! Bonks Cra (bonkers crazy)

Look people I had two times in one month. Yeah TWO because well lets just say crap happens. But hey life totally moves on. And my dad what a trooper he helped me both times. What can I say what can we do with out dads? not much.

That explains my whole lets disappear for a while thing.

I now have a roommate and a cat. Oh and a bird named Birdie.

But enough about me.

So you’re probably thinking I survive on biscuits and bacon and a little bit ice cream. Okay well a lot of ice cream. But look we can’t do that. I know I can’t I have tried. My thighs looked like tree stumps okay that’s pushing it but they didn’t look toned. Thank God I blended spinach into a smoothie. Just sayin’.

Having this smoothie makes up a little bit for the sugary things I have throughout the day. Let me be 100% honest. It doesn’t taste like spinach you may get green stuff in your teeth….so just don’t talk to that cute guy you like after drinking just make sure you brush your teeth and go! It tastes fruity sweet and has a hint of peanut butter for protein. Don’t believe me? try making this at home and surprise yourself. It make magic it would surprise me if you though a hobbit made this and a unicorn popped out of the cup.

Green Protein Smoothie

2 heaping cups spinach leaves

1 1/2 cup soy, almond, coconut, or cow’s milk ( I used cow’s milk)

1 frozen banana cut in to chunks

2 teaspoons honey

1 tablespoon of peanut butter (I used all natural)

Clean spinach leave and remove any thick stalks. In a blender mix spinach and milk until the spinach is blended well (no big chunks remain) it takes about 30 seconds. Stop blender and add banana, honey, and peanut butter. Blend until the banana is well blended/ combined. Enjoy immediately and feel super healthy!

Television Shows I’m Obsessed With… (right now)

Okay, yeah, hi…

I haven’t been able to make anything… I didn’t get to unpack everything before I found out I had to move out of my new home… I’m kinda dying here not being able to cook or bake anything…. I haven’t even been able to use my camera.

So I figured I’d give you a list of shows I’m into… Can I mention I haven’t had cable in 3 years? Yeah I don’t but I watch everything online. Well most things. So don’t judge me.

1. Dexter

I’m super sad that this is last season but I guess the plot would get a little dry… But if you never seen it get on that train…

2. Law and Order

I mean in general I love this show… SVU (Special Victims Unit), Criminal Intent, Trial by Jury, and LA I mean it could be 12 noon and I’ve seen the episode like a million times I still watch it. I’m lame like that it’s like I can’t get enough or something.

3. Pretty Little Liars

Guilty as charged. Yes I can’t get enough of this show. If you don’t know this show it’s about death and murder as well. It might not look at it but it is I feel like I have a theme going on here…

4. Being Human (U.S. Version)

Okay Vampires, Werewolves, Ghosts, Zombies, trying to adjust to everyday living. Without a lame love interest that they fight over thank god. Sam Witwer and Sam Huntington Both known in the sci-fi world which I love… my favorite is the werewolf but everyone on this show is amazing. Check it out…

5. Bates Motel

Creepy to have a relationship like that with your mother right? Talk about mommy issues… Lets just say the mother doesn’t drive him to insanity this time around. But it really doesn’t ruin the classic film either. So get on that!

So that’s my top 5 television shows I’m obsessed with right now.

P.S. Big Bang Theory is a tie with Bates Motel

Totes no big deal but seriously I’m finished… Back to repacking!

Irish Car Bomb Brownies

So last year I made these cupcakes.

This year I said let’s try making it a brownie… Here is the thing.

I kinda cheated…

I sorta kinda used a box mix and substituted the water with Guinness.

I was being lazy.

maybe because I was drinking too many of these… milkshakes and taking too many shots of this.

I also failed at this haha I though I would try and be cute and make them into shamrocks…

Fail whale!

good thing I only did it to four of them and I just ate the scraps anyways.

When in doubt just eat it.

Here are some facts that may or may not be true about St. Patrick’s day

One Day St. Patrick he tried to tell the irish people about the holy trinity. He was like “its like a shamrock. the father, the son and the holy moley.” The irish people were like “woah, God’s a shamrock?” He responded “Close enough.” That’s why the irish take the shamrock so serious. If you don’t wear one they’ll pinch you and stuff. Other wise you’ll be antichrist.

St. Patrick’s Day is celebrated March 17th which is the day St. Patrick died. It’s like christmas… for the irish. Everyone gets drunk on St. Patrick’s day. Irish Americans get extra drunk and celebrate all week. In Ireland they celebrate all year.

Irish people go around saying “kiss me, I’m irish!” all that kissing is the reason why they have such huge families…

St. Patrick invented a lot of stuff. Like river Dancing, the shamrock shake, the hug fight, public urination and white basketball.

Just to be clear this isn’t true and I don’t talk like that.

Irish Car Bomb Brownies

1 box of brownie mix

Guinness mine called for 1/4 cup of water I replaced it with Guinness and did 1/3 cup instead

oil

1 egg

For baking follow Directions on the Box.

Irish Cream Glaze

1/2 cup powder sugar

3-5 tablespoon of irish cream

whisk them together till you like the texture of it.

Whiskey Ganache

1 cup chocolate

2/3 cup cream

1 tablespoon butter

2-3 tablespoons whiskey

heat the cream. then add chocolate off heat then add the butter and whiskey. stir till shiny and smooth.

My Shamrock shake is a billion times better… Uh mine contains booze duh… Uh hello booze always makes it better

even if its 12 in the afternoon… Um lets just call you lunch! I really wish I could show you the emoji text I send to my friend Becca we basically text through little icon pictures 10 doughnuts and a french fries it must mean its lunch time!

Anyway… lets just say McDonald’s has nothing on this!

Yeah I know it sounds kinda gross but its soooo good!

I just love Guinness and mint! lets just put it together in the same glass and call it the new official drink of St. Patrick’s day

I love Guinness so much here a few fact about it

1. 10 million glasses of Guinness are sold around the world daily

2.The color of Guinness is not brown or black, its official color is deep ruby-red.

3. The harp on the label is based on a famous 14th-century Irish harp known as the “O’Neill” or “Brian Boru” harp, which is now preserved in the Library of Trinity College Dublin.

4. Guinness is sold in 150 countries and is super popular in Africa yeah that right Africa!

5. Guinness was originally an ale, Then in 1770 it was made in to a porter to keep in competition

and that’s all I really know about Guinness

Shamrock Shakes

Serves 1 big shake or 2 small

1 pint vanilla ice cream

4 to 6 shots of creme de menthe

3 to 5 shots of Guinness

1 to 2 tablespoons chocolate syrup

Put everything in the blender and blend on high until thick and creamy I put chocolate syrup on the sides of my glass poured in to the glass and drank it in 5 gulps.

Bachelorette Pancakes

So last Saturday we had a breakfast for dinner party… We made my bachelorette pancake recipe along with side and smoothie…

So here is my whole thing about my being a single lady and wanting pancakes!

I sleep in the middle of the bed. I think I might hog the pillows. I read a book in bed with a headlamp on my head. It’s dorky. Sometimes I fall asleep with the light on… mostly because I’m scared of murderers and not because I just happen to fall asleep with the light on.

I want pancakes for breakfast in the morning… every morning. But I just want one pancake. One crazy good, indulgent, morning breakfast for one pancake… with chocolate. Is that too much to ask? Heck. No.

Hush yo mouth. This mess is good.

… I just wanted to say hushyomouth… you were probably sitting there politely… my bad.

This is one big pancake. It’s got oats and banana slices and chocolate chips. Um… amazing. On top? More banana slices and toasted pecans. And heck yes I poured maple syrup all over this sucker.

I scarf it down in five bites… tops.

Then I go to the gym. Seriously. I do

Daniel has an apron with roosters on it…

and he sings to you while you cook.

So I cooked peaches in butter and brown sugar.

Soooooo gooooooooood ya hear me on that?

Who doesn’t like potatoes?

The Bachelorette Pancake

makes one large pancake or 3 small

1/3 cup all-purpose flour

1 Tablespoon dried oats (quick cooking or regular)

2 teaspoons sugar

1/2 teaspoon baking powder

1/4 teaspoon baking soda

pinch of salt

1 Tablespoon plus 2 teaspoons vegetable oil

1/4 cup plus 2 Tablespoons buttermilk (buttermilk is best , but you could also try regular or soy milk.)

dash of vanilla extract

small handful semi sweet chocolate chips

15 banana slices

toasted pecans

In a small bowl, whisk together flour, oats, sugar, baking powder, baking soda and salt. In a separate bowl whisk together oil, vanilla extract and buttermilk. Combine the wet and dry ingredients and stir to combine. The mixture will be thick. Fold in the chocolate chips and half of the banana slices.

Heat a small frying pan with a teaspoon of oil. Pour in the pancake batter and spread some with the back of a spoon. Cook over medium heat until bubbles form and pop on the surface of the pancake.

Flip. It’s ok if it doesn’t flip perfectly… it’s just you enjoying this pancake, remember!?

Cook until golden brown. Remove from pan and onto a plate. Top with the remaining banana slices, toasted pecans and maple syrup.

you can add different fruits and candies to the pancakes that’s just what I like personally.

If making for a group. I just chopped up different things and had them for toppings. Bananas, strawberries, peaches, greek yogurt, syrup, apple sauce, nutella, anything you want really.

So you’re stalking. First things first: type in name of unsuspecting stalkee.

Should you happen to type the stalkee’s name in the what’s on your mind bar…. well, their name will be your new status update. Oooh, and you really can’t delete that fast enough.

Consider this a public service announcement. Don’t be like me. I’m constantly embarrassed.

Drink you fruits. Ok… this is when you should totally be like me. Just don’t be like me on Facebook.

I know avocados are lovely and beautiful fresh from the market. But… if you’re feeling like a person that wants to turn on the blender…. OH! The wonder!

avocados transform from summer fruit, to cold, drinkable candy.

Mixed with coconut milk and bananas? Too good. Game over.

I love how simple this is to make

Well, would you look at that?

Things just got finer.

Blended fruits, juices and milk, topped with shredded coconut.

The avocados will make the smoothie thick and creamy while blending… that just means they’ve gotten cozy.

Tropical Avocado Smoothie

1/2 avocado

1/2 cup coconut milk (I use so delicious brand)

1/2 cup orange juice or water (I used orange banana pineapple juice)

1/4 cup plain yogurt or greek style (I used a non dairy yogurt that made with coconut milk so delicious brand)

2 ice cubes

1/2 frozen banana

1/2 teaspoon vanilla extract

2 tablespoons coconut

Add everything to the blended except for 1 tablespoon of coconut. Blend until smooth. Garnish with remaining coconut and sliced bananas.

Colorful houses…. It reminds me of Florida! But these are some of the houses for the believe in tomorrow foundation need to make them kinda fun for the kids.

I like brick walls. I want a brick exposed wall in a future home.

I have a hummer limo I just drive around for fun. You know #YOLO
