It’s My Nephews 1st Birthday and Aunt Jamie Made the Cake…

Isn’t that the cutest thing you ever seen?! Okay well wait a minute I take that back the cutest thing I’ve ever seen is my actually nephew but this is like the second cutest, well um, if you don’t count me (sarcasm) or Hello Kitty (true life)…

So It’s my nephews birthday today I’m going to the party this afternoon but I couldn’t wait to blog about this… Not only to show you this stinking cute cake idea that me and my sister in-law Becky found off pintrest… Are you on pintrest? follow me! I made my nephew a 6″ smash cake that’s the center cake thats for him to kiss the lion and rip apart and eat… He’s going to learn at an early age he is NEVER getting a box mix for a party as long as I’m around. We decide to go pretty basic with the flavors  since he’s only 1 chocolate and vanilla… He gets chocolate because it’s going to look cute all over his face and I mean the kid needs to learn what chocolate cake tastes like…

I did a new recipe for the chocolate cake… Yeah probably not the smartest time to experiment with new cake recipes… I mean I went with my gut always go with your gut… I mean, unless it’s shooting or stabbing someone then in that case you should probably pray and hope you come to your senses… I don’t need to responsible for you going to jail, okay? Lets hug it out.

So this cake is special it has a special ingredient that I can’t really believe I bought or used… It has mayonnaise yep, Mayo… But here’s the deal, You can’t taste it replaces the butter and already has the salt in it and It makes the cake super moist, I hate the word moist I’m shuttering at the thought. I tested a cake It’s really a delight to eat.

You mix your sugars and fat and eggs and flour then add this hot chocolate like mixture which it awesome… I learned a lot yesterday with this cake. pretty much don’t be scared to try new things and venture out with your comfort zone with certain things… I kinda learned that this summer with different things but I thought I’d share it now… Late bloomer… Thick thighs WHATEVER!

Chocolate Mayonnaise Cake

Recipe from Baked Elements: Our 10 favorite ingredients

makes 24 cupcakes or 1 6″ cake and 18 cupcakes

1 3/4 cups boiling hot water

3 oz of dark chocolate

1 2/3 cups of cocoa powder

1 3/4 cups of mayonnaise

1 cup white sugar

1 cup brown sugar packed

2 eggs

2 3/4 cups flour

1 tsp baking powder

1 1/4 tsp baking soda

Preheat the oven to 350 line cupcake pan (if making a cake butter your pan and then coat with cocoa powder no use for flour if making a chocolate cake) Now get your water on the stove and let it get to a rapid boil. Get Cocoa powder and Chocolate in a medium boil While waiting for that to boil sift flour, baking soda and powder sit to the side and get mayo and sugar mixing in a stand mixer until well mixed then add one egg at a time. By that point water should be boiling and taken off heat. you add the to cocoa mixture and whisk till it looks like hot cocoa let cool. Now add flour mixture till well combined scrape side of the bowl then add the chocolate liquid and mix until the batter looks well blended. Pour in pan and tins for a cake half way high and cupcakes I used a 1/4 cup to pour batter in cupcake tin. Bake for 15 to 18 minutes or until done. Cool.

Vanilla Frosting

4 sticks butter softened

6 cups powder sugar

1 tbls vanilla extract

Place all ingredients in a bowl beat until fluffy add colors if wanted

Assembly

Slice cake in the middle to put a filling it there if wanted I just put orange frosting then you ice the cake with frosting then use the opposite color to draw on cheeks then fill in with nose, tounge, eyes and whiskers if wanted. Then I place the cupcakes around the cake I made 2 ears you don’t have to.. I just needed ears I have anal issues on things should be a little accurate. then fill in the rest with mane color mine was orange and for an extra treat I placed reeses pieces on top of the cupcakes

Pumpkin Bottom Cupcakes

So it’s September and it’s 90 degrees I don’t care… Fall is my favorite season It’s just nice weather, delicious  food and veggies come to farmer and normal markets, I love the colors and smells of fall… I love Halloween but that’s a whole different post… maybe I can find pictures of little me at my dads house… I also love all the other holidays after fall. Also I will be 27 this november. It’s gonna be interesting, that’s for sure. Mos def.

So I got a little crazy and started to make  fall-esq desserts… I also kinda only have one photo of these… I had an incident happen and well I only have one photo but it’s okay.

Have you ever had a black bottom cupcake? it’s like that minus the chocolate and chocolate chips… It’s pumpkin cake with a cheese cake type filling after a baked them I realized butterscotch chips in the cheesecake part if you want the texture of the extra flavor. This cupcake is luscious and will get you into the mood for fall.

I don’t really have anything interesting to say… Just kinda busy at work, and I visited a best friend from college  over labor day weekend which was awesome. I’ve gone on some terrible dates I mean terrible… I am sitting here thinking about how I miss someone from the summer time whom which I probably should not… Listening to Lana Del Rey isn’t helping…

Let’s start the fall season.

Pumpkin Bottom Cupcakes

Adapted from Alton Brown

Makes 18 cupcakes

Bake at 350 for 18 -25 minutes

2 cups all-purpose flour

2 teaspoons all spice

1 teaspoon baking soda

1/4 teaspoon baking powder

1/2 teaspoon salt

1  cup white sugar

1/2 cup brown sugar

3/4 cup vegetable oil

2 large eggs

1 teaspoon vanilla extract

1 15oz can of pumpkin

1/4 cup butter milk

Cheese Cake Filling

1 8oz package of cream cheese

1 egg

3/4 cup sugar

Heaping 1/4 cup butterscotch chips (optional I didn’t use them)

Preheat the oven to 350 degrees. Line cupcake pan with liners. place all dry ingredients to the mixing bowl the flour, all spice, baking soda, baking powder, sugars and salt together. whisk them together be sure to whisk the lumps out (you can sift if you want to) In the same bowl, mix the vegetable oil, eggs, and vanilla, pumpkin and buttermilk. Once the ingredients are all incorporated pour into cupcake pans. In another bowl add all the ingredients for the cheese cake filling and beat until fluffy. Then take  the cheese cake filling and plop it onto of the pumpkin batter just a spoon full Bake for 18 – 25 minutes until finished. The cheese cake filling will look solid and look a little golden. that usually is a sign of being done.

BOOM BOOM BOOM!!

So, um… yeah that songs stuck in my head only because they still play it on the radio and guess where they play the radio? At work where it’s played like 8 billion times a day… Fortunately they did take the radio away so I no longer have to hear it but unfortunately I can’t listen to what I like when everyone leaves…

So my sister has been wanting cookies and cream cupcakes for like a month so I finally promised her would make them together at her house on Saturday… This was a big challenge I never have actually made anything for hey Jamie bakes while the sun was down and the blinds were closed so I had to use artificial light and my shadow was everywhere. It was hard but I did it!!

So yesterday I woke up laid on the couch in the living room since the sun shines right in my room at their house. Waited to go to the eye doctors and got contacts, went somewhere else that probably shouldn’t have that shall remain unnamed… Okay fine we went taco bell… No judging…. and we went home then later made our cupcakes… and they are bonkers…

I just had no idea how good they would turn out. I mean… seriously. I kinda impressed myself. Super good totally studded with Oreo cookie pieces in a fluffy soft cake! yum!!

These cupcakes are packed full of cookies and flavor…. They have junk in the trunk… Thick thighs, you know what I mean…

Cookies N’ Cream Cupcakes

Bake at 350 degrees for 18-20 mins

Makes 12 cupcakes

1 1/4 cups flour

3/4 cup sugar

1/2 teaspoon salt

1/2 teaspoon baking soda

1/2 teaspoon kaluah (optional)

1/2 teaspoon vinegar

1/2 cup buttermilk

3/4 cup vegetable oil

2 tablespoons water (maybe more I like my batter kinda runny)

6 Oreo cookies roughly chopped

12 Oreo cookies to place in the bottom of the cupcake liners (optional)

Preheat the oven to 350 degrees. Line the cupcake tray with liners then place one Oreo in each liner if you choose to have the cookie bottom. Then place all the dry ingredients in a bowl except the chopped Oreos. then add wet ingredients whisk together till well combined. Now time to add chopped ores fold in. now fill the cupcake pan with the batter. fill them till they’re almost full. bake 18 to 20 minutes or until done. let cool.

Cookies N’ Cream Icing

2 sticks unsalted butter

3 cups powder sugar

splash of kaluah (optional)

12 Oreo cookies finely ground

Place Oreos in a blender or food processor  and grind Oreos till finely ground. kinda looks like ground coffee. Now place butter and sugar in a bowl and you want to beat the two together till soft and fluffy. You may need to add a splash of milk if you need to make it less thick sometimes it feels to thick. Once fluffy you add your ground Oreos. once all combined and the icing turns this speckled gray color you are finished. Once cupcakes are cool ice the cupcakes.

Jacob’s and Olya’s Wedding and I made the Cake…

Yeah I decided to not go traditional. It was my friends brothers wedding and only 40 people. I really I thought a tiered cake was not ideal for this wedding plus cupcakes are more fun and I built the stand it was on! out of foam boards and PVC pipes and I decorated it with the fabric and such. The couple really didn’t really know what flavor cakes they wanted except chocolate. So the top cake was a dark chocolate cake with a vanilla bean icing. and I did a simple trim and ALL cupcakes and cake got white, pale pink, and Pale green pearls for a little decoration nothing makes me more mad than seeing a naked cupcake especially for a wedding. Grow a pair and stop asking for a muffin for breakfast just get a cake i mean it’s that same thing basically… Anyways Now for the cupcakes we did a vanilla cake with strawberry jam filling and vanilla bean frosting, and we also did a vanilla cake with pineapple preserves and coconut frosting also with vanilla bean. Also since they originally said chocolate, my friend and I said we will do chocolate but we will do black bottoms. For you not familiar with that term its a dark chocolate cupcake with a chocolate chip cream cheese surprise of love! and we topped it with a vanilla bean butter cream!

Multi tasking making batters… Yeah I’m not in my typical place making this. We made them at my friend’s house they have a way bigger kitchen then I do in my tiny apartment. Don’t be afraid of my bright yellow batter.I know it looks like it came from a box but It totally didn’t. I love to use this butter nut extract that wiltons that makes it just gives it that extra special touch! I think that’s what puppies and unicorns would taste like if I were to eat them. Yes you will be getting the recipes just not today.

These were not for the wedding my friend made these for her mom as a late mothers day gift… also to keep her moms fingers out of the batter… Everytime we make cupcakes at her house her mom always finds her way to the batter and icing it’s a laughable matter. Just this time we needed these to make it to the wedding for the bride and groom and 40 guests… chocolate dipped fruit is also a good snack at a wedding just sayin’….

Luckily we made all of them there and everyone restrained from eating them before the wedding that takes will power. especially with someone who loves batter and icing in the house, my friend that love cupcakes, and her dad that just eats everything and also another brother that drops on in that likes to eat my desserts… But they lived and survived!  Can someone tell me about how they feel about wedding toppers for the cake? I typically don’t like the old school bride and groom statue… It freaks me out I guess it reminds me of the creepy episodes of the twilight zone. You know when all the dolls come to life and start dancing around in their doll house? No you don’t Yeah I’m 26 and still watch old tv shows. But the mother of the groom bough it so I used it. I mean they still use toppers but have evolved so much since they started using them. But hey it’s not my wedding so I don’t get a say here…

But yes that’s my story about Jacob’s and Olya’s wedding cake!

Oreo Cheesecakes

Oreo cheese cake! I’m not a huge fan of cheese cake but I do like these. Screw making a crushed up crust. I used a whole Oreo with the more cookies in the batter. Yum.

Now I saw these on pintrest as a big cheesecake but I want to make little ones and so I made a Martha stewart recipe and it actually turned out right. Me and Martha don’t always get along but we get into it.

Oreo Cheesecake
Makes 12
Bake 18 -20 minutes
from Martha Stewart cupcake book

1 8 oz package of cream cheese
19 Oreos
1/2 cup sugar
1/2 tsp salt
1 tbsp vanilla
2 eggs
1/2 cup sour cream

Preheat the oven to 275 degrees them set up your cupcake pan with cupcake liners and place a Oreo cookie in the bottom. Next you beat your cream cheese and sugar together until smooth on a medium speed. Whatever you do never mix cheesecake on a high speed. Then you add your vanilla and salt. Scrap down sides of the bowl as you go. Next you put your eggs in one at a time till well combined. Then add in sour cream. Then you stir and fold in the rest of your chopped up Oreos. Even place the batter in the cupcake tin. Bake 18 to 22 minutes let cool then cool in the fridge up to 4 hours.

Tropical Flavor Cupcakes

It’s cold and rainy. So I went with a tropical theme cupcake maybe it will lift your spirits like it did mine.

Mango coconut is the name of the game. If you don’t like it you can simply leave. actually no don’t do that. I like you too much for that.

Maybe you can just try it, or drink in shower, like me.

Oh looking to a bottle of beer in the shower for your answers isn’t always right. But since when do I ever do anything right?

Don’t like beer? Try wine. Heck have a party  and have shots. but not jello shots. EW If you don’t do not invite me ick!

Tropical Cupcakes

1 1/4 cup flour

3/4 cup sugar

1/2 tsp salt

1/2 tsp baking soda

1 egg

1/2 cup butter milk

1/2 cup coconut milk

3/4 cup vegetable oil

1/2 tsp vinegar

1/2 cup mango chopped

Icing:

2 sticks of butter

3 cups powder sugar

2-3 tbsp coconut milk

1/4 cup coconut  flakes

Preheat oven to 350 line cupcake pan with liners then set aside. Place all your wet and dry ingredients in the bowl  and whisk together till well combined. Use a 1/4 cup to fill up cupcakes up.  bake in oven for 18 to 20 minutes or until done. For the icing place all ingredients in the bowl and beat together until combined and smooth. Ice cupcakes when cooled. sprinkle more coconut on top

Irish Car Bomb Cupcakes

IRISH FREAKING CAR BOMB CUPCAKES Saint Patrick’s day inspired but you defiantly don’t need it to be saint patrick’s day for you to eat or make these babies. Chocolate Guinness cake. Bailey’s Irish Cream frosting, and a Whiskey Chocolate Ganache. I think you just died, you just died thinking of how delicious these cupcakes are. If you want little cupcake packed full of flavor you defiantly have it in these!

For those of you who are unfamiliar with America’s staple St. Patrick’s Day cocktail, here’s what it contains: 3/4 pint of Guinness, 1/2 shot of Irish whiskey such as Jameson floated over 1/2 shot of Irish cream such as Bailey’s. The shot is dropped into the beer and chugged quickly, before the mixture begins to curdle. Some say it tastes like a chocolate milkshake.  Um no.. I’m a lady I don’t go to bars as a single lady chugging shots… Geez how would I know how it tastes… You all are bonkers…

For those of you who are very familiar with this St. Patty’s Day drink-of-choice, are you also familiar with what an Irish car bomb is exactly? I would assume that if you’ve never looked into the meaning, you’d have no idea where the name came from. Well, it’s your lucky day (I need that lame drum sound right now), here’s a little history lesson! From the 1960s to the later years of the 1990s, Northern Ireland was involved in a period called the Troubles. During the Troubles, war was declared and ongoing violence took place. On July 21, 1972, the Irish Republican Army (IRA) used 22 car bombs in the city of Belfast. These bombs took the lives of a few innocent people, while many were left severely injured. This day became known as Bloody Friday. Many people these days find the use of the name ‘Irish Car Bomb’ to describe a popular drink to be offensive and distasteful, while some find it fairly harmless. In American culture, this is a drink we are simply accustomed to ordering on St. Patty’s Day. So next time you order one, you’ll know a bit of the history, too. Yeah I can be smart sometimes.

Irish Car Bomb Cupcakes

1 1/4 cup flour

3/4 cup sugar

1/2 tsp salt

1/2 tsp baking soda

1/2 tsp vinegar

1/3 cup cocoa powder

1 egg

3/4 cup oil

1/2 cup buttermilk

1/2 cup Guinness

Ganache:

 8 ounces bittersweet chocolate

2/3 cup heavy cream

2 tablespoons butter, room temperature

2-3 teaspoons Irish whiskey

Icing:

2 cups confectioners sugar

1 1/s stick unsalted butter, at room temperature

3 -4 tablespoons Bailey’s

Make the cupcakes: Preheat oven to 350°F. Line 12 cupcake cups with liners. Place flour, sugar, cocoa, salt, baking soda in the bowl whisk them to blend. Then add buttermilk, vinegar, vanilla, egg, oil and Guinness  till well combined. Take a 1/4 cup fill it with batter and fill the cupcake pan. 1/4 cup should be  enough to fill your cups with bake 18- 25 minutes do the bounce back test or use a tooth pick to see if it come out clean. cool before frosting them.

Make the Ganache: pour chocolate chips  to a heatproof bowl. Heat the cream until simmering and pour it over the chocolate. Let it sit for one minute and then stir until smooth. (If this has not sufficiently melted the chocolate, you can return it to a double-boiler to gently melt what remains. 20 seconds in the microwave, watching carefully, will also work.) Add the butter and whiskey (if you’re using it) and stir until combined.

Make the Icing: Whip the butter in the bowl of an electric mixer for several minutes. You want to get it very light and fluffy. Slowly add the powdered sugar, a few tablespoons at a time. When the frosting looks thick enough to spread, drizzle in the Bailey’s (or milk) and whip it until combined. If this has made the frosting too thin (it shouldn’t, but just in case) beat in another spoonful or two of powdered sugar.
